  • 2 tsp Rowa baobab powder 
  • 250g all-purpose flour
  • 150g brown sugar
  • 1 ripe banana
  • 180ml non-dairy milk
  • 100ml olive oil
  • 1 tbsp baking powder
  • 1 tsp vanilla bean powder
  • ½ tsp nutmeg powder
  • 1 cup frozen blueberries
  • Additional brown sugar and berries for sprinkling on top
  • INSTRUCTIONS -Preheat the oven to 180 C.
  • Blend the banana, non-dairy milk, vanilla and brown sugar in a blender on high. Add olive oil and mix.
  • In a large mixing bowl, stir together the flour, organic baobab powder, nutmeg powder and baking powder.
  • Add the wet mixture to the dry and stir to combine.
  • Gently fold in the blueberries.
  • Spoon into a muffin pan lined with paper liners or lightly oiled.
  • Sprinkle the tops with berries and brown sugar.
  • Bake for 22-24 minutes at 180°C (Gas Mark 4).
  • Let them cool for at least 10 minutes before removing from the pan.
  • Eat and enjoy!
